Its just "executable +any_console_command +some_other_console_command". So you want

Quake3-UrT.exe +set password "super secret password" +set cg_fov "110"

Although I would recommend putting all those things into a cfg file instead of listing them all as commandline options. Makes editing way easier. Then you can just do

Quake3-UrT.exe +exec my_settings.cfg

Or you just put it all into the "autoexec.cfg", that is automatically run by the game on startup.

Speaking of launching, is it still possible to launch the game in 32-bit on a 64-bit server? I no longer see the Quake3-UrT-Ded.i386 command.
If so, how to launch it?

My local install has one from 2016 (just like the rest of the files). The checksum on the download page also lists it. Its possible that the linux updater script doesnt download it, but I dont know.
